The Princess Cookie or "The How To Make Friends and Influence People" Cookie

This is the best cookie in the world. 
The balance between buttery and crispy and sugary is unparalleled in any other food. 
It is this cookie's simplicity that makes it highly complicated. You want it to be more work.  You want to pretend that producing this cookie takes some technique that was passed up from the Aztecs because it SHOULD HAVE BEEN!  
Instead, they are so easy you will cry with joy and they taste so good you will continue to sob until you realize you are being ridiculous. 
Every time I make these cookies I clap when they are done. They are perfect little sugar babies filled with golden glory. 
And NOW the recipe:
1 1/2 cup confectioners sugar
1 1/2 cup flour
2 sticks of slightly softened unsalted butter (1 cup), cut into small chunks
one pinch of salt
2 tablespoons of vanilla extract
parchment paper
1/2 cup granulated sugar

Put confectioners sugar and flour in food processor.  Put chunks of butter on top.  Pulse a few times and then let it spin while you add pinches of salt and vanilla.  Process until a smooth dough forms but do not over mix.  Dump the dough onto the piece of parchment and form a log.  Roll the log in parchment and Refrigerate Overnight.
Slice the log into 1/4 inch slices and pat both sides in granulated sugar.
Place in staggered rows on a parchment lined cookie sheet and cook for 8-10 minutes at 350 degrees or until they look like the picture below.  Let them cool completely.  Store in the refrigerator.

FUN FACT: Mix fully cooked cookies with melted butter in food processor for a CRAZY awesome tart shell or cheesecake crust. I would say three cups of crumbs to 8-10 tablespoons melted butter.

  1. These look so good I might shed a tear.....can we have them with coconut custard in between for our next girls dinner? or dip them in chocolate? or dip them in tequila??
